Varietal Composition: 50% Chardonnay, 40% Viognier, 10% Sauvignon Blanc
Alcohol: 14.5 ° by Vol.
Aging: 25% in small concrete tanks; 75% in stainless steel tanks

Vinification

This process begins by hand-picking the grapes to ensure that leaves avoid going through the press. Once selected, the entire cluster is sent through the press accompanied by dry ice, which is used to eliminate the presence of oxygen at low pressure (up to 0.8 bar). A pre-fermentation maceration is carried out at 41°F. Subsequently, the fermentation process begins at a low temperature, with careful attention to the lees. Post fermentation, the less are kept working for a year, resulting in this elegant wine.

Tasting Notes

This wine displays a soft, pale yellow color with green reflections. Aromas of melon and peach are present. Additionally, aromas of wild rue, typical of the Sauvignon Blanc grape, are expressed. This blend is both crisp and fresh. Its natural acidity gives it a silky and pleasant finish.
