

A unique blend with a complex co-fermentation that gives us a long floral sparkling wine with excellent structure.
Vineyards: Los Chacayes, Uco Valley, Mendoza, Argentina.
Altitude: 1200 above the sea level
Irrigation: Drip
Varietal Composition: 60% Pinot Noir, 20% Chardonnay, 20% Gewurztraminner.
Production: Aging in concrete egg tanks and ceramic vessels; second fermentation in stainless steel tanks.
VINIFICATION
This process begins by hand picking the finest grapes. The entire cluster of grapes, along with dry ice, goes into a pneumatic press, where gentle pressure is applied. After that, a cold maceration is produced at 44.6˚F. Subsequently, the fermentation process begins at a low temperature in order to promote the extraction of fruit and floral aromas. After 8 months of working with its lees, a second fermentation takes place in stainless steel tanks, where careful attention is paid to the pressure and temperature (no higher than 60.8˚ F). Finally, the wine is bottled.
Tasting Notes:
This wine has a soft color, with golden tones and delicate bubbles. In terms of the aroma, the Pinot Noir stands out immediately with its accompanied floral scent, resulting in a round and expressive sparkling wine.
